WP Chocolate PB Energy Bites with Coconut Oil Coconut Milk almonds and almond butter FINAL
Energy Bites

Ingredients

Base Recipe:

  • ⅔ cup nut butter of choice
  • ½ cup mix ins like nuts or seeds
  • 1 cup old fashioned oats or GF flour like almond
  • ½ cup ground flax seeds
  • 2 tablespoons honey

     

  • For Chocolate Peanut Butter - use Wholesome Pantry Peanut Butter for nut butter, unsalted peanuts and mini chocolate chips for mix ins, and a few tablespoons of cocoa powder
  • For Pumpkin Pie - use half Wholesome Pantry Pumpkin and half Wholesome Pantry Almond Butter for the nut butter, pumpkin seeds and pecans for mix ins, and 3/4 tsp pumpkin pie spice
  • For Apple Crumble - sub out honey for Wholesome Pantry applesauce, use Wholesome Pantry Cashew Butter for the nut butter, almonds and sunflower seeds for mix ins, and 3/4 tsp apple pie spice

Directions

  1. Combine all ingredients in a food processor and pulse until combined. (Alternately, you can mix all of this by hand in a bowl.) Place mixture in fridge for 20 minutes to make the bites easier to roll.
  2. Roll mixture into one dozen balls and store in fridge for up to 7 days.

DIY Cookie dough and Brownie Batter Hummus with WP Animal Crackers FINAL

Edible Cookie Dough

Ingredients

  • 1 15-oz. can Wholesome Pantry garbanzo beans, rinsed and drained
  • 1/2 cup favorite nut or seed butter, like Wholesome Pantry cashew or Wholesome Pantry sunflower seed butter
  • 1 tbsp vanilla
  • 3 tbsp Wholesome Pantry applesauce or honey
  • 1 tsp Wholesome Pantry maple syrup (optional)
  • 2 tablespoons mini chocolate chips

Directions

  1. Combine all ingredients except the maple syrup and chocolate chips in a food processor and blend until thick and creamy and resembles cookie dough. Taste and add additional maple syrup if needed. Fold in chocolate chips and serve!

Brownie Batter Hummus/Dip

Ingredients

  • 1 15-oz. can Wholesome Pantry garbanzo beans, rinsed and drained
  • 1/2 cup favorite nut or seed butter, like Wholesome Pantry almond, peanut or sunflower seed
  • 1 tbsp vanilla
  • 3 tbsp Wholesome Pantry applesauce or honey
  • 2 tbsp cocoa powder
  • 1 tsp Wholesome Pantry maple syrup (optional)
  • 2 tablespoons mini chocolate chips

Directions

  1. Combine all ingredients except the maple syrup and chocolate chips in a food processor and blend until thick and creamy and resembles cookie dough. Taste and add additional maple syrup if needed. Fold in chocolate chips and serve!

WP Oven Roasted Chickpeas FINAL

DIY Roasted Chickpeas (or Nuts)

Ingredients

  • 2 (15 oz) cans Wholesome Pantry garbanzo beans, rinsed and drained
  • 4 tsp spice mix (combinations below)
  • 1/2 tsp Salt
  • For Apple Spice or Pumpkin Spice: 1 tbsp honey, 3 tsp apple pie or pumpkin pie spice and 1 tsp brown sugar
  • For BBQ: 1 ½ tsp cumin, 1 ½ tsp chili powder, ½ tsp cayenne, ½ tsp paprika, 1/4 tsp black pepper, ¼ tsp brown sugar
  • For Soy Ginger: 2 tbsp soy sauce and 1 tbsp ground ginger, toss with sesame seeds if desired

Directions

  1. Preheat the oven to 425 and Line a rimmed baking pan with parchment paper
  2. Make sure chickpeas are fully dried (optional – you can remove the skins before roasting)
  3. Combine spices in a bowl big enough for the chickpeas, then add the chickpeas and toss them until well coated in spice mixture.
  4. Spray chickpeas with cooking spray and then roast at 425 degrees for 15 minutes. Remove from oven, toss/stir with a spatula and spray with a little more cooking spray if needed, then return to oven for an additional 15-20 minutes or until golden brown and crispy.
  5. Let cool completely before storing in an airtight container for 4-5 days.

Note: Looking to make this treat #ketoapproved ? Swap out the chickpeas for your favorite nut like cashews or almonds! Reduce the oven temp to 350 and continue with the rest of the recipe.
